Peel and cut the plantains into small chunks to make it easy to mash
Next, use a fork or a hand mixer to mash the plantains till they are almost in a paste form
Afterwards, throw in the eggs, sugar, butter, baking powder, nutmeg, vanilla extract and salt, while mixing together till you get a smooth consistency
Slowly add the flour and sour cream one at a time and continue to combine the entire mixture together
Once the batter has been mixed to a smooth consistency it’s time to bake
Pour the batter into a greased baking pan (I use a 9 x 5inch pan)
Place a few (4 - 5, or more) Dodo Frozen Plantain slices on top of the batter in the pan, and bake for about 50 to 55 minutes
Insert a toothpick or clean knife to check doneness
Once it’s ready let it cool in the pan for about 20 minutes
Enjoy a slice or two with your favorite ice cream or coffee

Store your plantain loaf on a plate covered with a plastic wrap or aluminum foil. The loaf will remain fresh for 3 to 4 days at room temperature.
